

Chia is probably the best kept nutritional secret in the country and it absolutely baffles me why more people in America don't know about the powerful nutrients these seeds contain. When people ask me what I attribute to my good health, I always just say, "Chia seeds!" and they give me look that says, "You're joking, right?" That's because most people only know chia seeds as those furry little ceramic "pets." Sigh...it just seems really sad to me that a food source that is historically known through Central and South America (and elsewhere in the world) as a tremendous source of protein and Omega 3 oils is only known as a cute little "pet" here in the States. I'm amazed because even the USDA knows about the positive effects chia seeds can have on glucose levels in Type 2 diabetics. Here's what the USDA (USDA NRCS Plant Guide) says: "Chia is one of the traditional foods that is considered useful by researchers in treating diabetes." A variety of sources state that a person can walk for a full day with a handful of chia seeds and adequate water.
